Buddha Bowls are a great way to bring many colors into one meal.  Each buddha bowl will have a rice or grain (see options) chicken, red onion, beets, zucchini chunks, red cabbage, sauted greens, roasted sweet potato and carrot shreds.  The dressing is delivered on the side so you can add as much or as little as you like.
