Do you struggle to find the perfect allergy free pancake recipe? Well here you go! This pancake is protein rich and sugar free as well!
Let's begin! Measure and mix the dry ingredients:
1 cup of quinoa flour
1/2 cup tapioca starch
1/2 cup potato starch
1 tsp pink himalayan salt
2 tbsp baking powder
1/4 cup monk fruit sweetener ( I used the Krisda brand)
Now put together your wet ingredients.
Create one flax egg with 1 tbsp flax meal and 3 tbsp water, mix and let stand, it can be added last.
1/4 cup avocado oil
I cup almond milk ( I used Califia brand)
1 tsp vanilla
1/3 cup applesauce (may be replaced by an additional flax egg)
mix together in a two cup pourable measuring cup or bowl.
Add flax egg and mix in well.
Add wet ingredients to dry ingredients and whisk until smooth.
Heat grill pan to just above medium setting. I use avocado oil spray on the pan to ensure the pancakes do not stick. Make sure to wait until the surface has bubble holes and begins to look almost dry before flipping your cake!
